Use an electric mixer: When beating the egg yolks and heavy cream, I highly recommend using a stand mixer or a handheld mixer to beat your egg yolks (unless you want an arm work out). 

Use good Espresso: I make my espresso at home using a moka pot, but you can simply buy some espresso from your favorite coffee shop, or can substitute with a very strong coffee.

Combine Hot Espresso with Tincture: If you’re using a cannabis tincture, mixing into hot espresso will help evaporate some of the alcohol.

Combine the mascarpone w/ yolk: Make sure the combine your mascarpone cheese with the egg yolk, and then fold that mixture into the whipped cream.

Don’t over-soak the ladyfingers: Depending on the brand, ladyfingers may fall apart if left in the liquid too long. Handle with care and only dip them for a few seconds.

Cannabis Infused Tiramisu Recipe

Serves: 4–8 stoners

Ingredients

  • 2 tsp cannabis infused alcohol tincture
  • 3/4 cup espresso or very strong coffee
  • 4 egg yolks*
  • 1/2 cup white sugar
  • 3/4 cup heavy cream
  • 8 oz mascarpone cheese
  • 24 ladyfingers
  • 3 tbsp unsweetened cocoa powder

*We will be using raw egg yolks in this recipe, if you are hesitate or cannot consume raw eggs, I advise excluding the yolk or using an alternate cream mixture.

Instructions

  1. Make your espresso (or strong coffee). While the espresso is still hot, pour it into a shallow dish and mix in the cannabis tincture. Set aside to cool completely.
  2. Egg Mixture: In a large bowl, whip together egg yolks and sugar until very pale yellow and size has tripled (~5 mins). Gently mix the mascarpone into the egg yolk mixture and set aside.
  3. Whipped Cream Mixture: In a separate mixing bowl, whisk the heavy cream until stiff peaks form.
  4. Gently combine the whipped cream and egg mixture until smooth and well combined.
  5. Assembling: Dust the bottom of the baking dish with a light sprinkling of cocoa powder (~1 tbsp). Working one at a time, quickly dip each ladyfinger into the cannabis espresso mixture and place them on the bottom of the baking dish. Repeat, using half the ladyfingers, until you’ve created an even layer (break the ladyfingers in half to fill in any big gaps).Spread half the mascarpone mixture over the ladyfingers in an even layer.
  6. Repeat with the remaining ladyfingers and mascarpone mixture (two layers of ladyfingers and cream). Dust the top layer with cocoa powder (~1 tbsp).
  7. Finish and Chill: Cover with plastic wrap and let the cannabis infused tiramisu chill in the refrigerator for at least 4 hours before serving. You can refrigerate it for up to 2 days.

Can I use cannabutter instead of tincture, when making cannabis infused tiramisu?

You can substitute the cannabis tincture with cannabutter for this recipe. I recommend melting the cannabutter and combining it with the heavy cream, before whipping it up.

Refrigerate a minimum of 4 hours before serving, but I prefer to let chill around 8 hours for optimal flavor. The longer the weed tiramisu chills, the more time the ladyfingers have to soften and the flavor has to develop.
